Our friends were very excited – they found a low carb rice substitute.  It was a product made by Miracle Noodle.  It is made from Shirataki or elephant yam.  They used it in their paella.  Not bad.

I went out searching for it and finally found the product (without added Tofu) at a health food store.  Bought the Fettuccine Noodles.  Made them up as a side dish with olive oil and Parmesan cheese.  Not bad – not good.  Like eating rubber bands.  One package was not enough to really be a serving.

I also purchase two packages of thin spaghetti like noodles.  A couple of nights later, we made them up as spaghetti and meat balls for dinner.

The good part – they are nothing but fiber – and absorb the flavor of the sauce – the bad part – they are gelatinous and rubbery and – way more expensive then a package of real noodles.

The thin noodles are a bit better – still a bit rubbery.  I will probably cook them in the sauce next time rather than just pour the sauce over them.

My wife summed it up: “Not bad – just don’t want to have them on a regular basis – keep them as an every now and then treat.”

Last evening we had friends over and served Beef in Curry Coconut milk sauce.  Since 3 out of 5 of us are not Low Carbing – I made up a batch of rice along with my normal batch of chopped cauliflower.  One person opted for the cauliflower.  She summed it up well.  The rice merely conveys the sauce to your mouth.  The cauliflower does that job almost as well.
