Moroccan Sheet Pan Chicken with Olives

Made this last night for dinner. Really good. 


1 pkg Chicken Thighs with Skin on.
2 medium sweet onions, sliced lengthwise
1/2 cup Manzanilla Olives Stuffed with Pimientos, cut in half
1 lemon, sliced into rounds
5 tbsp Extra Virgin Olive Oil, divided
3 tsp Adobo All-Purpose Seasoning with Pepper, divided
1 tbsp Minced Garlic (or 2 cloves, minced)
2 tsp ground cumin
1 tsp smoked paprika
1/2 tsp tumeric
1/4 tsp cayenne pepper


Preheat your oven to 450 degrees F.

Line a sheet pan or baking pan with foil. Onto the sheet pan, toss together sliced onions, olives, lemon rounds, 2 tablespoons of olive oil and 1 teaspoon of Adobo seasoning.

In a small bowl, stir together 2 tablespoons of olive oil and 2 teaspoons of Adobo seasoning, garlic, cumin, smoked paprika, turmeric, and cayenne pepper. Rub chicken thighs with the spice paste. Place the spice rubbed chicken thighs on top of the vegetables, on the sheet pan. 

Alternative: Place the chicken on top of the vegetables in the sheet pan. Paint the chicken with olive oil. Put the seasoning in a shaker and shake it over the chicken. Much less messy and more evenly distributed.

Roast the chicken and vegetables for 30 to 35 minutes until golden brown and chicken is cooked through. Chicken is done when a meat thermometer inserted in the center reaches 180 degrees F.

Remove chicken from sheet pan. Transfer vegetables to a serving platter and place the chicken thighs on top.

Homemade Adobo All-Purpose Seasoning

3 tablespoons garlic powder
2 1/2 tablespoons salt
2 teaspoons ground black pepper
1 teaspoon dried oregano
1/2 teaspoon ground turmeric

Directions: Whisk garlic powder, salt, black pepper, oregano, and turmeric together in a bowl. Store in an airtight container.


Fall 2016 52DC – Finish Line


It has been the strangest of Challenges. Just after the sign-up people started having trouble logging in. It just go worse. We were down to less than a handful who regularly had the ability to post. Luckily – I was one of them.


I finished the Challenge – not my best – actually close to my worst. But I finished.


My  Final Numbers for the Fall Challenge – Friday, October 7, 2016 – Day 52 (100%)
CE: 93/104/96 (96.88%) 
RT: 18/15 (120%) 
CT: 19/15 (126.67%) 
PG1 (Push-ups): 2600/2600 (100%) 
PG2 (Chin/Pull-ups): 630/520 (121.15%)  


Earned a Silver Medal – I had lowered my expectations on RTs and CTs because of vacations and family obligations – should have done the same for CEs – ah well.


Real happy with the chin/pull-ups.  Getting better each day with with pull-ups. I had stayed away from them for years due to a shoulder injury. Rehabed the shoulder and moved on to doing these – carefully.
We’re back on line – On to the next Challenge!

Men’s Health Forum Frustration


It is now over one month since the Men’s Health Forums – went to hell.

Just at the time the Fall 52DC was starting – all hell broke loose. We have no idea how many individuals have been unable to log in. We do not know if many could not sign up or once signed up – could not post. This is severely detrimental to the 52DC.

It is not just the general public – but – the Moderators themselves.

Last visit date as of 9/22/16:

Rookie – 8/16/16 – Moderator

MacDaddy – 8/19/16 – Moderator

Baseball mom024 – 8/19/16 – Challenger

Winemann – 8/25/16 – Challenger

Ibizan – 9/8/16 – Moderator – was locked out for a week and then on. But now – it has been 13 days since he’s been on. We can only hope that he is on vacation – since he is the last Mod standing. At this point – I doubt it.

Others have manged to get on from in different ways – using a different computer, operating system or circuitous sign on methods.

It is disappointing that an entity as big as Men’s Health can’t fix the problem. Of course their Facebook site is going full blast.

Chinese Fried “Rice” with Chicken



Found this product at Costco the other day. What to make? What to make? 

Chinese Fried Rice – what else? Turned out pretty good. Next time, I will not precook the cauliflower.

Chinese Chicken Fried Rice


2 eggs
2 tablespoon water
2 tablespoon butter
2 tablespoon sesame oil
1 onion, chopped
1 can Asian stir-fry vegetables (Rinse and Drain)

4 cups cauliflower riced, cold
4 tablespoons soy sauce
1 teaspoon ground black pepper
1-2 cups cooked, chopped chicken meat


In a small bowl, beat egg with water. Melt butter in a large skillet over medium low heat. Add egg and leave flat for 1 to 2 minutes. Remove from skillet and cut into shreds.

Heat oil in same skillet; add onion and saute until soft. Then add cauliflower rice, vegetables, soy sauce, pepper and chicken. Stir fry together for about 5 minutes, then stir in egg. Serve hot.
