Almond “Cornbread” Muffins

“Cornbread” Muffins:

  • 1 cup almond flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/4 cup sour cream
  • 1 Tbsp heavy cream
  • 2 Tbsp butter, melted
  • 1 tsp sugar substitute
  • 1 tsp garlic (or onion) powder

Preheat oven to 350 F.  Mix all of the ingredients together.  Pour mixture into greased mini-muffin tins.  Bake for 15-20 minutes or until golden brown and cooked through.

Net Carb Count -estimate: 16 net carbs (for the entire recipe–makes 24 mini muffins)
