Almond Crackers


1 cup almond flour or finely ground almonds run through a blender.

2 tsp Splenda granular

1 egg white, hand beaten

1/4 tsp salt

dash of garlic powder and onion powder

or – vary the flavor – use ranch powder, ground bacon bits, seasoned salt

Pre-heat oven 325. Mix ingredients well. Place mixture onto a large piece of parchment paper and lay an additional sheet on top. If you don’t have parchment paper, place mixture onto a well-greased piece of tin foil. Spray a piece of wax paper with cooking spray and lay over top of mixture.

Use a rolling-pin to roll out to a cracker thickness. Gently remove the top parchment or wax paper. Sprinkle more salt (or sweetened cinnamon) on top if desired and press lightly into dough. Score with knife or pizza cutter into squares. Lay the parchment paper or tin foil on a flat baking tray. Bake until golden brown about 10 minutes. Makes around 25-50 crackers depending upon how thin you roll them out and the size you want.

Taste great with a smear of whipped cream cheese.

    The first crispy thing I’ve had in 2 weeks and I love them. Will figure out how to better roll them out next time, but that is on me. Thanks for the cracker.
