Cheese Crisps


Cheese Crisps:

Wedge of parmesan cheese

Roll of parchment paper or a silpat.

Pre-heat your oven to 400 degrees.

Grate the parmesan cheese a little coarsely.

Put roughly a tablespoon into little rounds or whatever shape you want on top of a silpat/parchment paper covered cookie sheet.  This’ll make small-sized chips, you can make them big like cookies too if you like, just put more cheese in the round.

Bake for 5 minutes and take out of the oven.  Let cool and they should crisp up like chips.  (You can microwave – but be super careful of the time – or it turns into cardboard.

To make the flavored kind just mix in whatever spices you like before you put the cheese on the sheets, smoked paprika is phenomenal, rosemary is awesome as well.
