Cheese and “Crackers”

Grate 8 ounces of Cheddar, Parmesan or Swiss cheese. 

Microwave an 8 oz package of cream cheese for seconds at a time until it is soft. 

Beat in the grated cheese and pack into a 16 oz. Mold. 

Firm up overnight in the refrigerator.

Un-mold the cheese spread on a platter and surround with sliced cucumbers, zucchini and red and green sliced peppers.
