Eggs Florentine – Quick and Easy


This recipe came about because I attempt to use all of the leftovers from the night before in my morning eggs.

We had made a bag of Stop and Shop Frozen SteamReady Creamed Spinach.  This product is made with both Parmesan and Romano cheeses along with cream and butter.  It does have a bit of milk in it along with cornstarch and sugar.  Those contents are down the list and the end result is not far off target for a Low Carber.

1/2 cup serving:  6 grams fat, 5 grams carbs, 1 gram fiber and 3 grams protein.  Calories – if you must know – 100.

Heat the Steam Bag in the microwave as per directions.

While that is cooking put a pat of butter or olive oil in the fry pan.  Heat to medium.  Carefully drop in the eggs so they are “Sunny Side Up.”  Once the whites set, turn off the heat.  Sprinkle the eggs with Shredded Parmesan Cheese, salt & pepper to taste.  Cover the pan and let sit until the cheese melts but the yolks are still soft.

Place a 1/2 cup of the Creamed Spinach in the center of the plate and spread it out a bit.  Place two eggs on top and serve.

Variation:

Cook up Flax Seed Bread in a Cup.  Slice into rounds and toast.  Place a spoonful of spinach on each round and top with one egg.
