Flax Seed Bread in a Coffee Cup


1/4 cup ground flaxseed meal
½ tsp. cinnamon
½ tsp. baking powder
1 egg
1 teaspoon Sweetener
1 tsp butter

You may coat the inside of the Mug with butter or olive oil.  Mix all dry ingredients in a straight-sided coffee mug.  Once mixed, add egg and butter and beat until smooth.  Microwave for 1-2 minutes until done (watch carefully, as it can dry out quickly and get really brick-like). Allow to cool slightly, then loosen edges with a blunt knife and remove from coffee cup and cut into slices. This is a lot like a nutty whole-wheat bread, and can be toasted.

Edit: 9-13-14 – I substituted Coconut Oil for the butter in the recipe and for coating the cup.  Works great.



Large Mug or Cereal Bowl
Butter or Olive Oil Spray
1 large egg
1 tsp. canola oil or butter
1/4 tsp. double-acting baking powder
2 tb. Bob’s Red Mill flax meal (best brand around)
1 level scoop Designer Whey French Vanilla protein powder (This is optional)
1/2 tsp. cinnamon
1 tb. Davinci Splenda sweetening syrup or just Splenda.
cream cheese

Coat the bowl or cup with oil or butter.
Crack in egg into it and beat with fork. Stir in oil or soft butter, then baking powder, flax meal, protein powder, cinnamon and sweetening syrup. Stir well.

Nuke uncovered for 1 minute. Cool, loosen edges with a blunt knife and pop out.

Eat cold or hot with anything.  You “frost” it with a thick layer of cream cheese.

    I found your blog thanks to Grace2882 and tried the first bread recipe last night–amazing! I live in a tiny NYC apartment with no oven, so I miss out on a lot of the bread substitutes that most low-carbers swear by. I love the way it was half-savory, half-sweet; it seems like it would taste great with anything.
