Hash Browns – Cauliflower


1/2 head of cauliflower, chopped fine.  You can use a package of frozen cauliflower – just keep it dry

1 small onion, chopped

½ green pepper, chopped

blob of butter or Canola Oil

1/2 cup grated cheese (cheddar, parmesan)

salt, pepper, season to taste


In a large frying pan, over med high heat, melt butter.

Add onion, green pepper and cauliflower, stir well to coat with the melted butter. Brown slightly.

Reduce heat and continue to cook until tender. Stir occasionally to keep from burning. Approx 20 minutes.

Sprinkle with grated cheese. Either stir it in and continue to heat; or leave it on top and put the pan under the broiler for a few minutes.
