Muffins
- 2 Cups Almond meal
- 2 Cups Splenda
- 3 Tsp Baking Powder
- 4 Eggs
- 1 Tsp Vanilla extract
- 1/4 Cup Water
- 1/4 Butter
Bake in muffin tray for 13-15mins
If you don’t mind some carbs, throw in berries. I like blueberries for this
To make them chocolate low-carb muffins, just don’t use vanilla extract but instead add
1/2 Cup Cocoa powder
1 extra Cup Splenda

Cinnamon Butter Spread
- 1 stick unsalted butter, softened
- 1 Tbsp cinnamon
- 1 pinch kosher salt (probably around 1/4 tsp)
- 3 drops no-carb liquid sweetener (the equivalent of 3 tsp/1 Tbsp sugar, whatever variety of sweetener you use)
Mix together.
Makes a fantastic cinnamon butter that you can spread on anything you think needs cinnamon butter. I may try it with a 1/2 tsp of cayenne pepper next time to get a little kick.
I use the no-carb liquid sweetener, but theoretically you could use a tablespoon of Splenda; I avoid Splenda because of the carbs in the maltodextrin filler. My way is completely carb-free.
