Smoked Salmon Roll-Ups

While away for a weekend, we stopped at Wegmans in Williamsville, New York.   We were looking for light food to hold us over while spending an evening visiting friends in the Finger Lakes.  Always difficult to have finger food that isn’t carb heavy.  We found a tray of smoked salmon roll ups.  This is a simple item and really does the trick when you are looking for something to put out next to the cheese board and as an alternative to chips and dip.

Smoked Salmon Roll-Ups.

Smoked Salmon slices and Cream Cheese.

Lay out the slices of the smoked salmon on waxed paper or parchment paper.  Form a 3-4 inch wide strip about 10 -12 inches long by overlaping the slices and pressing them together.  Spread a thin layer of Cream Cheese over the strip.  Roll the strip into a log.  Slice into half-inch thick rounds.  Serve chilled.

Flavor the cream cheese by adding finely chopped chives, or any other seasoning you enjoy.

Place each salmon round on a slice of cucumber.

Cut Cherry Tomatoes in half and cap each round.
