Sweet and Spicy Nuts


I picked this recipe up from the Atkins site.  My wife makes a version of this that is only “sweet.”  She adds vanilla and sugar substitute.  She will make up a large bag and once dry, freezes them in individual serving plastic bags.

ETA 8/3/11: I made these last evening.  Much easier to make than it appears.  The only nuts in the house – walnuts.  The hardest part – waiting 50 minutes while they baked.  Spicy hot – great with a light beer on a hot day.

Sweet and Spicy Nuts

Makes: 8 servings

Ingredients:

  • 1 large egg white
  • 1 tablespoon water
  • 2 tablespoons granular sugar substitute
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne pepper
  • 2 cups mixed nuts (pecans, almonds, macadamias, walnuts)

Directions:

  1. Heat oven to 275̊F.  Line a baking sheet with aluminum foil; spray with nonstick cooking spray.
  2. In a large bowl, mix egg white, water, sugar substitute, salt, pepper, cumin, cinnamon and cayenne. Add nuts; mix until evenly coated.
  3. Spread nuts in a single layer on prepared baking sheet.  Bake 50 minutes to 1 hour until golden brown.
