Chicken and Broccoli Stir Fry


1 pound of boneless skinless chicken breast cut into 1 inch pieces.
2 cloves of finely chopped garlic.
2 tsps of finely chopped ginger.
1 cup of chicken broth.
3 tbsps of soy sauce.
½ tsp chili paste
2 tbsps Peanut Butter – Optional
2 tsps of sugar substitute.
2 cups of broccoli florets.
1 medium onion – sliced into strips.
8 mushrooms sliced.


Over medium high heat, heat a nonstick skillet with olive oil or coconut oil and add in the broccoli, onions, mushrooms, garlic, ginger and chicken fry until chicken is brown – about 2 to 3 minutes.

Add 1 cup of broth, soy sauce, chili paste, peanut butter and sugar substitute. Cook covered for 5-10 minutes. Stir occasionally.


There was a bit more than one cup left over along with 3 cups of chicken broth. Chopped up the stir fry and added it to the chicken broth for a great soup the next day.
