The Best Flax Seed Pancakes Money Can’t Buy


FLAX SEED PANCAKES

These are well worth the effort. 

Makes about 12 – 4 inch diameter pancakes – or two servings.

Ingredients:

  • 1/4 cup fine ground flax-seed meal [or half flax seed and half almond meal]
  • 4 large eggs
  • 2 teaspoons of Splenda
  • 1 teaspoon of cinnamon
  • 1/4 teaspoon baking powder
  • Olive oil to coat cooking surface

Tools:
One hand-held electric mixer
Frying pan or flat grill
Large spoon
Rubber spatula

Directions:

Measure out 1/4 cup of ground flax-seed meal

Add two teaspoons of Splenda and 1 teaspoon of cinnamon to the flax-seed. Set aside.

Separate four eggs, yolks in one bowl and whites in another (for kitchen newbies, if any yolk gets into the whites, start over. Whites will not beat-up if contaminated with yolks)

With an electric mixer, on highest speed, beat the egg whites until they are very white, thick and they peak. Do not over beat.

With the same mixer, beat the yolks until mixed well and add all of it to the whites

On lowest speed, beat whites and yolks until melded, about 20 seconds.

While using the mixer on slow, add the flax-seed mixture to the beaten eggs one tablespoon at a time until all of the flax-seed mixture is incorporated. You may need to use a Spatula to scrape the sides of the bowl.

Spread olive oil lightly over a heated large frying surface.

Using a large serving spoon, place scooped mixture on the frying surface, dropping pancakes about one inch apart. Fry over medium heat for approximately 3 – 4 minutes on a side, flipping pancakes over when they are lightly browned.

Serve with no carb jams or syrup. Pancakes can be refrigerated and reheated.

We top with Walden Farms Carb/Calorie Free Blueberry and Strawberry spread.

    Hi! I loved coming to this website, I currently started the Paleo lifestyle combined with some intermittent fasting and low carb. Crazy huh? Anyways, I was dying for some type of bread haha and I came upon this recipe and made these pancakes. I loved them! They fullfilled my craving, I topped them with some raspberry splenda jam I had, and also had some mushrooms, squash and turkey breast ham sauteed with garlic as a side. Lovely. How does this sound to you? Healthy enough? I would absolutely love if you would write how many carbs, calories this recipe is. Thank you again!

      Thanks for stopping bye. Glad this recipe worked out for you. It is one of my favorites.

      I really don’t count calories. Check out the nutritional value of the Flax Seed Meal. It has very few net carbs but is high in calories. The rest is eggs and oil. The Splenda has a bit of carbs but not worth speak about.

      Thanks for stopping bye. This is a recipe that my wife put together. The number really depends upon how big you make them. You will probably get 6-8 pancakes.

      Once you get the hang of it, then you can play around with seasoning, Some people add bits of fruit such as blueberries or chocolate.

    Hi! I am just starting the TNT diet. Are all the recipes you have listed here okay for plan A?

    Because I have a foot injury, I can’t do the workouts right now, but I am on day 5 of the eating plan.

      A qualified YES. Just keep an eye open – every now and then something sneaks in – usually a variation. Most Low Carb receipe links are NOT Plan A so be careful as you go out searching. In the beginning – keep it simple. Protein and veggies cooked plain and straight forward.

      A great support site is the Men’s Health Forum. I Have a link to it posted. It is a super place to ask questions and get insight.

    These were just amazing! Instead of cinnamon, I substituted pumpkin spice and added a teaspoon of vanilla. Fantastic!

    This was really yummy! Mine didn’t thicken up much, so I had to add a little starch, but it worked well! I also didn’t have a mixer so I just did it by hand could have had something to do with it. Very good recipe though I added blueberries to mine w/a little cottage cheese & honey. VERY YUMMY! Thank you!

      The eggs have virtually none. Splenda has a couple. The Flax seed is 99% fiber and fat – End result – not enough net effective carbs in a pancake to make a difference.

    Hello, these pancakes are great, light, airy, yet you are full, I used raw coconut crystals instead of stevia, and added 1 teaspoon of chia seeds when I beat the egg yolks (additional protein and fiber). I cooked the entire batch as the egg white will loose some volume when refrigerated. It’s easier to warm and eat especially if your on the go……Thanks for the receipe

      Your point is well taken – what – if anything would you use to add a little sweetness to the pancakes? The alternative – turn them into a dinner side dish flavored with onion – etc.

      I’ve been moving to a stevia based sweetener.

        For sweetness, you could use pureed pumpkin. It has natural sugars and tastes wonderful with the cinnamon. I’ve made them on my website. This one looks great, too! I wanted to use up the large bag of flaxseed I purchased at Costco.

    These were very tasty. I did, however, add some chopped apple and chopped pineapple (well drained) to mine and left out the Splenda/sugar/what have you. They were very light, but they were a bit hard to turn in the pan. I’ll just have the practice with them more. But I got a huge plateful of pancakes without all the carbs and calories, and my pancake craving can be satisfied for the moment. I also put a little blackberry fruit spread-no sugar added-as my “syrup”.

      Glad they came out OK. Last batch we made, we subbed some coconut flour for the flax seed – same would work for Almond flour.

      My wife is the one who came up with this recipe, It took a couple of batches to get the measurements down.

    These pancakes were so dope bro! I had that sweet craving tonight and these really kept me on track without slipping up. I used “Walden Farms Pancake Syrup”, and it it hit the spot.

    I also through some bacon on top to make sure I got my fat in, but then I had a thought that these would be perfect to try and make something like the mcdonalds mcgriddle, lol. Anyways, thanks for the recipe.
